Because I work in true small batches, there can be some natural variation from batch to batch, especially when the fruit itself changes from one harvest to the next. In this case, the peaches had a slightly less sweet profile than earlier batches, which can make the cayenne feel more forward even though the recipe itself didn’t change. Once a recipe is approved by the state, I’m not permitted to tweak things like sugar or spice levels on the fly, even when the fruit behaves differently.

I did notice the heat was a bit more prominent in this batch, but felt it still fit the description of “sweet with a little heat.” That said, I completely understand that it landed outside your personal comfort zone, and I never want someone to feel disappointed.

If you’d be open to it, I’d love to make it right by sending you a jar of another fruit butter on the house. I wouldn’t recommend another peach butter this season, since the remaining inventory is from the same batch, but I’m confident one of the others would be more in line with what you enjoy.
